A declaration of love and a delicious soup recipe all in one.

I’m in love, I’m in love and I don’t care who knows it!  (A gold star for you if you can name that movie.)

What exactly am I in love with?  My new pressure canner.

This past holiday season I bought two turkeys at the grocery because they were on sale for such a good deal.  Knowing there was no room in my freezer for these turkeys, I decided to cook those bad boys up and can the meat in my pressure canner.  I ended up with eleven quarts of turkey ready to use at a moments notice.

Then I made some good old fashioned turkey stock out of all the turkey bones I had leftover.  I ended up with two gallons of gorgeous, gorgeous stock.

I used half of that stock to make my family’s favorite soup: Greek lemon chicken soup, substituting turkey for chicken.  (It’s seriously delicious, you should make some today.)  Then I canned the rest in pint jars to use at a later date.

So how much do I love my pressure canner?

Well, just today my little girl was taking me to task for an unfortunate word that slipped out of my mouth.  Eden looked me straight in the eye and stated firmly, “Mother!  You should only say bad words if you are getting kidnapped or if someone is stealing your car!”

She then pondered for a moment and added, “Or if someone is stealing your pressure canner.”

That’s how much I love my pressure canner.
